Chips & Queso

I don't know about you but I love going to my favorite Mexican Restaurant and eating the fresh hot corn chips and the house salsa. It is so good when they are fresh and crispy like that. I decided to give it a try at my house and I would say that they turned out rather well.

For this recipe you will need:
Oil for frying
Corn Tortillas-the thinner the better. Trust me on this one
Salt
Queso or Salsa or Guacamole

First get your oil heating up. You want it to be nice and hot. It should start sizzling immediately when you put a chip in.

While the oil is heating up cut your corn tortillas into chips - Like so.

When oil is nice and hot place a handful of chip in and let them cook until the are crispy and golden and begin to get air pockets in the chip. Longer is better as long as they aren't burning.

When you remove them from the oil place them on paper towels and salt immediately.
Enjoy with your favorite dip.

Oh and it always helps to have good company in the kitchen.
