Beef Taquitos

This is a recipe that I picked up from my kids' pre-school recipe board. It is really good and really easy to make. A definate winner!
1 medium onion, chopped
1 clove of garlic
¾ lb. ground beef
½ cup salsa
½ tsp. salt
¼ tsp. pepper
2 tsp. chili powder
10 (6 inch) flour tortillas
½ cup shredded cheese

Brown the hamburger with garlic and onion. Stir in the salsa, salt, pepper, and chili powder. Cook over low heat for 10 minutes, stirring occasionally. Place tortillas on plate and cover with damp towel. Microwave until warm and pliable (about 45 sec.). Top each tortilla with ¼ cup of filling, spreading to an inch from the edges. Sprinkle with cheese. Roll up tortillas and put on a foil lined baking sheet with seam side down. Brush lightly with vegetable oil or spray quickly with Pam. Bake at 400* for about 8-10 minutes until lightly browned. Serve with salsa, sour cream, lettuce, tomato, Spanish rice, and refried beans. You could smother it with enchilada sauce. Maybe try chicken instead of beef?

Here's a recipe that's very close to this that has chicken:

Anna Decker’s Chicken Quesadillas
2 to 2-1/2 cups shredded cooked chicken or turkey
1 cup salsa
1/3 cup green onion, sliced
1 tsp cumin
1/2 tsp oregano
1/2 tsp salt
8 to 12 (depending on fill) whole wheat tortillas
1 to 2 cups cheddar cheese
Preheat oven to 400°F. Combine chicken, salsa, green onion, and spices in skillet for ten
minutes. Spray tortillas with cooking spray on one side. Put one tortilla, spray side down, on a
cookie sheet, top with chicken mixture, add cheese and cover with another tortilla, spray side up.
Continue until the chicken mixture runs out. Bake for 10 minutes; remove from oven and cut
with a pizza cutter. (Try a little sour cream with the chicken mixture sometime!)
