Fried Rice

Leftover rice & mixed veggies tend to just go bad in our house so this makes the perfect quick meal to use those up. Probably about 15 - 20 minutes, one pan, and you will have a tasty meal for your family. Can't beat that! Tip: If you keep your cooked rice out of the fridge it won't get hard and gross. Downside is that it won't last as long. Maybe a two or three days.1 1/2 C. Chopped Ham or Chicken or Beef or Shrimp or Spam-(tastes pretty much the same as ham. Main difference is fat content, but it's handy because you can have it readily available in the pantry)
2 Eggs
1 1/2 C. Mixed Veggies (as much as you like really)
About 6 C. Cooked Rice
1/4 C. Soy Sauce

Heat a large tall sided skillet, pot, or electric skillet to medium high heat. Fry ham until you get some beautiful browning and push to one side of pan. Spray available space with a little Pam or oil and scramble eggs with no S&P. Try not to let egg spread into ham, but really no big deal if it does a little. Push cooked eggs on top of ham. Heat veggies through in empty space and then mix everything together. Add cooked rice and mix well. Add soy sauce and mix well again. It's ready to go! Yummy!
