Whole Wheat Honey Glazed Fruit Muffins

This was demonstrated at enrichment night by a lady in our ward and at first I thought they were going to pretty gross considering how healthy they are, but boy was I wrong. They are phenomenal! You should really at least try them once before you decide they look too healthy.




1 Cup White Flour
1 Cup Whole Wheat Flour
1/2 Cup Brown Sugar
2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. Salt
1/2 Cup Chopped Nuts (add to dry)
2 T. Ground Flaxseed (for added health) Optional

2 Eggs
1 Cup Buttermilk (regular milk can be substituted)
1 tsp. Vanilla
1/2 Cup Cinnamon Applesauce (or regular with cinnamon added)
1/4 Cup Fruit - Fresh or Dried Blueberries, Apricots, Pears, Peaches, Raisins, Mangoes, or any fruit that you like cut up into small chunks. (Add to wet)

Mix dry ingredients in a larger bowl. Mix wet ingredients in a smaller bowl. Add wet to dry and mix until just moistened. Spoon into muffin tin or bread pan. Bake at 425 for 10-15 minutes for muffins. 20-25 minutes or till toothpick comes out clean for loaf.

When finished cooking dip them in warm honey to glaze.
